Responsibilities: 

  • Ensuring the smooth operation of their respective area of the kitchen and be capable to help and cover other parts of the kitchen just as well
  • Directing food production in their respective area in a timely and cost effective manner
  • Primary food production, preparation, cuts, transformation and butchering of all raw products, cooking of all ingredients, all cooking methods and "foyer de cuisson"; sauteing, grilling, roasting, frying, baking, poaching, steaming, stewing, braising, smoking, candying etc.
  • Sauce and soup making, vegetable, fruit, meat and fish curing, drying and pickling.
  • Elaborate pastries, chocolate work, basic sugar work, collaborative in occasional more intricate preparations which are done by Sous-Chef and Chef

Qualifications:

  • Previous professional cooking experience in a similar position required
  • Must hold Inter-Provincial Red Seal 
  • Proficient knowledge of food safety a must
  • Ability to train personnel
  • Ability to supervise personnel and show strong leadership
  • Must be personable and friendly 
  • Excellent customer service skills required
  • A willingness to learn
  • High energy and strong work ethic
  • Possess good health and safety habits
  • Food Safe certificate required
