Having sharpened his knives at renowned restaurants both in Canada and abroad, Chef Ron has been able to diversify and hone his skills across various cuisines and culinary styles. He brings to Grouse Mountain more than 25 years of experience and his leadership in the kitchen and across the entire food and beverage team has already proved to be invaluable. 

With a food philosophy of: simple ingredients, treated properly and executed well, Chef Ron has transformed the menus across the different dining options at Grouse Mountain while allowing local, seasonal produce to shine. 

“That’s the way to produce good dishes,” he said. “It starts with the product and then it moves on to the care that we take in the kitchen before reaching the customer and allowing them to experience it.” 

“The interesting thing about Grouse Mountain is that we have an array of different venues within the Chalet that really provide something for everyone,” he continued. “I can take a little bit of all of my experience and apply that to making a delicious cheeseburger or poutine in Lupins, to an amazing salad in Altitudes, and then playing around with high end ingredients like black truffle in The Observatory.” 

It was this culinary diversity that originally attracted Chef Ron to the role in the first place. Well, that, and the view. 

“Being able to come to work everyday and have the benefit of looking over the city is clearly amazing.” 

Putting Chef Ron’s food philosophy into practice, we’re excited to announce our new menus: Altitudes Bistro (already available), Winter Fondue (launching December 3) and The Observatory (launching December 5).

Altitudes Bistro
Available Now
Sample distinctly British Columbian cuisine while overlooking the grandeur of the Lower Mainland, some 3,700 feet below. Having already been in rotation for a few weeks, the menu features more variety, with a focus on quality ingredients providing more options for guests, including gluten free and vegetarian alternatives.

Winter Fondue 
Available for booking, begins December 3 
This winter season, we’re taking a very classic, European approach to fondue, using high quality, locally sourced ingredients. Featuring two courses, complementing the food will be a wine and beverage list showcasing some of the finest Okanagan vineyards and local craft brewers and distillers. Access via the Super Skyride is complimentary when booking in advance. Experience this as a stand alone experience or combine it with a Snowshoe Tour (Weather Pending).

The Observatory
Available for booking, launches December 5 
Hosted in a mountaintop chalet with windows overlooking the city lights of Vancouver, enjoy a dining experience at new heights. Diners can choose from 2 or 3 courses with Mountain access via the Super Skyride complimentary when making an advanced reservation. With a distinct focus on seasonality, the new menu pays homage to British Columbia in a fresh and unique way. Focusing on a series of core ingredients, the kitchen team will be given the freedom to be creative and experimental with their dishes. Allowing these ingredients to shine on the plate will mean guests can return multiple times in the season and have a different culinary experience each time.

Inspired by the diversity in offerings that we have on the Mountaintop, Chef Ron has increased menu selection across all menus and has promised to deliver an on an ever increasing benchmark in service and quality of experience.
